Abstract:

The study was undertaken during the period 19911994 to isolate and characterise yeasts associated with surfaces of fruits, grains and fermented products of the materials. isolate and the major aims of the study were to characterise their habitats yeast strains focusing on and to elucidate their physiological and biochemical analysis. Banana: potential through experiments The following yeast strains and were from banana in Masaka/Rakai: Candida Y40, Candida Y60, hansenii, isolated Candida pulcherrimin, Saccharomyces Hanseniaspora cerevisiae, Debaryomyces Hanseniaspora Y20, Saccharomyces Y26, Y68, Y21, Saccharomyces Y12, Schizosaccharomyces Debaryomyces Cryptococcus Schizosaccharomyces Y37, Y13, Saccheromyces pastorianus, Torulopsis Y29, Hansenula Candida pombe, Y49, Y42, Hansenula Y62, Saccheromyces bruxellensis, Saccharomyces Y56, Debaryomyles Y10. Lodderomyces elongisporus, Tonto, Masaka/Rakai: bruxellensis, pastorianus, Hansenula Saccharomyces Hanseniaspora Y68, Y12, Y26, Schizosaccharomyces pombe, chevalieri, Dekkera Candida Y33, Candida Y6, Dekkera Y1 7, Saccharomyces ellipsoides Saccharomyces Y21, Y68, Saccharomyces Schizosaccharomyces Cryptococcus Y50, Saccharomyces Y25. Muramba, Mbarara/Rukunguri: Candida Y42, Hansenula Y49, Hansenula Y62, Hansenula Y67, Saccharomyces Y30, Y56, Saccharomyces Debaryomyces pastorianus. Y68, Schizosacchoromyces Y40, Debaryomyces Y48, Saccharomyces Amarwa from Jinja/Tororo/Mbale: Candida 2, Candida 11, Hansenula 2, Hansenula Saccharomyces Schizosaccharomyces 3 ON, 32, 44M, Schizosaccharomyces 30M, Saccharomyces 30P, Schizosaccharomces 44M, Schizosaccharomyces 44N, Saccharomyces Schizosaccharomyces pombe, Schizosaccheromyces 44T. Apart from the study of biodiversity, the study cerevisiae, was also undertaken to study population density of yeasts responsible for certain fermentation processes. The fermented products of bananas, sorghum and millet were tonto, Masaka/Rakai, Mbale. muramba, kwete and Mbarara/Rukungiri amarwa and (ajon) in Jinja/Tororo/ In Masaka/Rakai the mean count of colony forming yeast units in tonto, the c.f.u. were 5.07 x 10 7 ml'1. In Mbarara/Rukungiri the counts for banana were 76.6 cm'1; Muramba 5 x 107 m1'1 Muramba 5 x ml counts on banana were 2.5 cm'1 In Jinja/Tororo/Mbale and amarwa 1.5x10 Experiments on selected strains of yeasts show that 1 some of the yeasts were yielding ethanol and co2, brewing and bread industry.
