Abstract:

Potatoes can be eaten fresh or processed. There are more than 100 ways in
which potato can be prepared into acceptable and appetizing dishes. Potatoes
can be eaten as a snack, a vegetable and as a staple food. In this
booklet 43 potato recipes will be discussed.
Among the same class of root crops, potatoes have the highest and most
favourable protein: calorie ratio. Potato protein is composed of most essential
amino acids except methionine. It is a very good substitute, and
much cheaper than animal protein, and mothers should use it a great deal to feed their children.
