Abstract:

The manufacture of sugar from juice is a process that is effected by subjecting the juice to
many stages of physical-chemical treatment processes. Juice clarification is the first of these
stages and therefore the most important because any mistake made at this stage affects all the
subsequent stages. It is therefore imperative that we have a clear understanding of all the
factors that affect this process in order that we can avoid making mistakes which may turn
out to be very costly in production. So, this paper is a concise collection of all the factors that
ultimately affect juice clarification. Wide ranging literature was consulted and experimental
data collected to study how these factors affect the factory process in Kinyara Sugar works.
